My friend was really interested to make keto pancakes and he used a recipe online which contained so many ingredients such as syrup, vanilla essence…

So I decided to try it myself and used just basic ingredients to see how it goes. Instead of wheat flour, I used almond flour or coconut flour. The substitute flour does not contain gluten so high ratio of egg to keto flour is used.


Keto Pancake Recipe

Makes 4 Pancake


Ingredients

19g coconut flour/ 100g almond flour

2 eggs

1/2 tbs Lakanto Sweetener

1 tsp baking powder

Cooking oil/ Butter

1 tbs Water (Optional)

For chocolate flavour add 1 tbs cocoa powder and 1/2 of water

Ingredients for Keto Pancake

Method

1.Mix flour, sweetener, baking powder and eggs. Leave it for a few minutes to thicken. Add water (optional) if batter is too thick.

Keto Pancake Batter

2. Heat up pan on medium heat and pour 1 tbs oil or butter.

3. Pour batter and cook it for 3-4 minutes. Then flip it using a spatula and cook it for 3-4 minutes. Can use a pan lid to cover it.

Keto Pancakes

4. Left the pancakes to cool and bagged them to freeze.
