This was one of the quick soups I had regularly in Glasgow. Sometimes having a soup to go with rice and dishes is really comforting especially during the cold winter months.
If I add enough dried anchovies, I do not need even need to add salt. I used to buy my dried anchovies from the Chinese supermarket and store it in my pantry. The ingredients: cucumber and garlic are readily available.
It takes 25 minutes to cook this soup but if you don’t mind not sieving the anchovies from the soup stock, it just takes 15 minutes.
Quick Dried Anchovies Cucumber Soup/ Ikan Bilis Cucumber Soup
(Makes 1-2 servings)
1 tbs cooking oil
40g dried anchovies (ikan bilis)
2 clove garlic
Heat up oil and brown garlic and dried anchovies. Add in water and boil for 15 minutes. Sieve soup and remove anchovies and garlic. Add in cucumber and boil for 10 minutes. Add salt to taste.
