I did this before CNY celebration but had only gotten around to post this now. The plan was to roast peanuts together with the rest of the nuts and seeds. However skinless peanuts were out of stock at my local hypermarket so it was a last minute thing.


I really like mala flavour so wanted to do a batch of spicy peanuts that were not that strong tasting. I roasted peanuts and kept a small portion for fried peanuts.


Spicy Peanuts Recipe

Ingredients

1 cup of peanuts

1 tsp sichuan peppercorn

1 bayleaf

3 dried chilli (seeds removed)

1 star anise

cooking oil

salt to taste

Method

1.Toast sichuan peppercorn on a warm pan and pound them to powder after it cools down.

2.Fry peanut with oil until brown and put aside

3. Fry star anise, bay leaf and dried chilli

4. Stir in peanuts,salt and sichuan peppercorn.


Roasted peanuts

Method is similar to other nuts and seeds

Roasting duration 7-8 minutes.
