I tried cooking a vegetarian dish consisting of browned firm tofu and shiitake mushroom. You can add other mushroom is you want. Other root vegetables e.g. potato or carrots can be added to this dish but it might change the flavour.

The firm tofu is pat dry then roasted. You can deep fry it also. The shiitake mushroom is soaked in water and left in the fridge overnight to hydrate it.

Hydrated Shiitake Mushroom

Vegetarian Tofu & Mushroom

Ingredients

1 tbsp cooking oil

1 tbsp sugar

3 tofu

10 shiitake mushroom

1 tbsp vegetarian oyster sauce

1 tsp dark soy sauce

1 tbsp light soy sauce

1 star anise

2 cloves

Salt to taste


Method

Soak shiitake mushroom overnight in fridge. Keep mushroom soaking liquid.

Rinse tofu and pat dry. Roast or fry tofu blocks and cut it into triangles. Set aside.

Heat oil n sugar. When sugar caramelizes, add mushroom mushroom soaking liquid and water. Add in oyster sauce, soy sauces, star anise, cloves, tofu and mushroom. Boil then simmer for 30-40 minutes. Add salt to taste.
