This was my first attempt trying out sourdough pancake and wanted to make it more like an apam balik (Malaysian Peanut Pancake). It has a crushed peanut and sugar filling.
I tried to do a healthier version that was not too sweet by reducing sugar/ omitting. I made 4. One plain (no added sugar), one with honey (no added sugar), one with banana (no added sugar) and the other with sugar syrup. Honestly I couldn’t taste too much of a difference besides the banana one.
Sourdough Peanut Pancake
Recipe
(a) Pancake (Makes 5 in 7-8 inch pan)
60g SD starter (unfed)
170g flour
80g water
30g honey
2 eggs
½ tsp baking soda
(b) Peanut Filling
200g Crushed Roasted Peanut
Sugar/ Sweetener (Optional)
Method
1.Mix sourdough starter, honey, flour, water. Rest it for half an hour and keep in the fridge overnight.

2. The following day, mix eggs and baking soda using a hand mixer.

3. Oil pan with butter/ oil and use a ladle to pour batter.
3. Add peanut filling and sugar/ sweetener and fold it into half.


How was it?
It does not taste like a typical apam balik but it still tasted pretty good. I added banana into one of them.
It was really filling so Piglet and I had it for 2 meals.
