This is a really quick soup and can be prepped within 20 minutes. The base of the soup is anchovy broth consisting of dried anchovies and garlic. It is browned in oil to bring out its flavour. It is quicker compared to the meat broth.

Chinese Spinach Soup with tofu and anchovies (Amaranth Soup)
Ingredients
1 tbsp cooking oil
1 tbsp dried anchovies (ikan bilis)
½ tsp chopped garlic
1 block tofu
1-2 cups of Chinese spinach (amaranth)
2-3 cups of water
Salt to taste
Method
Fry dried anchovies and garlic until browned. Add water and boil for 10 minutes. Add in Chinese spinach and tofu and boil for a few minutes. Add salt to taste.
