After making tahini and hummus, I thought I will give baba ganoush a try. I have not eaten it but the ingredients are quite basic so it shouldn’t go wrong. I kept it basic and opted not to add other spices e.g. coriander or cumin.

Surprisingly it was really bitter initially so I added more lemon and some parsley topping to neutralize it.

Kept it in the fridge to have it for brunch the following day and surprisingly it tasted better than I thought. Piglet prefers hummus though.


Baba Ganoush Recipe

Ingredients

2 medium egg plant

2 tbs extra virgin olive oil

3 tbs lemon juice

3 tbs tahini

2 cloves of garlic

salt to taste

parsley for garnish

vegetable oil to roast egg plant


Method

1.Oil the tray and egg plant

2. Roast egg plant for 40 minutes 180C

3. Scoop out the flesh of the egg plant and discard the egg plant skin.

4. Blend egg plant flesh, extra virgin olive oil, tahini, garlic, lemon and salt to taste. Homemade tahini recipe here.

Used it as a dip with homemade sourdough pita bread.
