Butterfly pea flower is one of the latest health food trend. It has been used here as a natural food colouring for nyonya cooking (kuih) and malays cooking (nasi kerabu).

It is claimed to have many health benefits and antioxidant properties. I have recently planted it and it started flowering within 3 weeks. The flowers are pretty and the plant is quite low maintenance.
I put it under the hot sun to dry it up.

To use in cooking, add hot water to fresh/ dried butterfly pea flower and leave it for 20-30 minutes. Remove the flowers.
