A few years ago, I saw raw cauliflower ‘rice’ sold on the supermarket chilled Salad shelves in Glasgow. There were also zucchini ‘noodles’ and carrot ‘noodles’. I guess those were the healthy carb substitutes.

My friend had also bought a spiralizer then and been making zucchini ‘noodles’. Just a simple stir fry with garlic but not too long as it will be soggy. Honestly speaking I wasn’t game for it because I love my rice and pasta. Haha….

I was making bibimbap for this dinner party and some did not consume rice. So let’s make some cauliflower ‘rice’.

Grating

Firstly, grating the cauliflower…

I can use either a grater or the grater blade in the food processor. I used the food processor as it is less messy.

The florets grate it into bits in pieces but the stem itself grates it into long pieces.

Cooking

I was thinking… Should I sautee , steam… Or mixing both. There was too much for me to sautee and steaming it will make it soggy. And it was a pretty big batch.

I switched on the induction to max, added the raw grated cauliflower into the pan (oil free), added about 1/4 cup of water initially and covered the lid. Soon after, the lid started fogging up (steam). I added water as required and it was cooked in 5-10 minutes. I didn’t want it too crunchy yet too soggy.


Flavouring

It was to be quite plain, similar to rice so I added a pinch of salt only.


Taste

It does not taste like rice but its a pretty good substitute if you can’t eat rice. It’s quite neutral and plain tasting.
