I had leftover rice in the fridge from a meal 3 days ago. It was starting to get really hard and dry so I decided to cook kimchi fried rice.

Kimchi fried rice is really simple. The basic ingredients are kimchi + fried rice. If you fermented the kimchi yourself, you might be left with a lot of kimchi juice/ liquid. That can be added into the rice during the stir fry.

I like mine to go with fried eggs and Piglet likes his with bull eye eggs.


Kimchi Fried Rice Recipe

Ingredients:

2 tbs oil

1.5 cup of cooked rice

1 cup of chopped kimchi

Kimchi liquid


Method:

Heat up garlic and oil. When garlic is browned, add in kimchi and stir fry. After 3 minutes, mix in rice. Add kimchi liquid and stir fry until dry. Add salt to taste.
