My curry powder stock had finished and I was too lazy to run to the nearby store to buy a new packet. Fortunately, I have most of the spices in my larder and decided to blend a mix.
Malaysian curry powder is a mix of spices that is very orangey in colour from the turmeric. It also has a strong coriander flavour but not as heavy compared to garam masala.
The chilli powder can be added to taste. I omit the turmeric powder in the blending process and it stains the cooking equipment.

Recipe
Ingredients
3 tsp turmeric powder
3 tsp coriander seeds
2 tsp cumin seeds
1 tsp fennel seeds
2 tsp chilli powder
8 cloves
3 star anise
2 pieces of cinnamon
10 cardamoms
10 black peppercorn
Method
1. Toast the spices above except chilli powder and turmeric powder.
2. Leave the mixed spices to cool
3. Blend the mixed spices
4. Add in the chilli powder and turmeric powder
