Instead of the usual barley drink, I’ve decided to add in mashed pumpkin. Piglet did comment that it looks quite misleading as the colour looks like orange juice.


Pumpkin Barley Drink Recipe

Ingredients

400g pumpkin

150g barley

4 pandan leaves

Sugar (Optional)

3L water


Method

1. Rinse barley.

2. Add barley, water and pandan leaves to the pot and boil then simmer for 1 and a half hours.

3. Steam pumpkin for 30minutes or soft and mash it.

4. When barley drink is ready, remove pandan leaves and add mashed pumpkin.

 5. Mix it, serve warm or chilled.
