I had half a bitter gourd but did not feel like stir frying it so I did a quick soup. It takes 40 minutes but if you use a readymade chicken stock it will take 25-30 minutes.
At some hawker shops selling pork noodles or fish ball noodles, they also sell a healthier twist by adding bitter gourd into it. Piglet mentioned that the broth tasted quite similar to it.
Quick Bitter Gourd & Minced Pork Soup

(a) Pork Marinate:
200g minced pork
1 tsp corn starch
1/2 tsp sesame oil
1 tbsp cooking wine
1 tsp light soy sauce

1 L water or chicken stock
1 small bitter gourd
1 tomato
1 tbsp fried shallots
Salt to taste

(c) Chicken bone
Method
1. Blanch chicken bone. Boil chicken bones for 20 minutes. Marinate minced pork for 15-20 minutes.
2. Add in minced pork, bittergourd and tomato into pot for 20 minutes.
3. Add salt to taste. Top it with fried shallots.
