After hosting several dinner party as a student, I learnt that using the oven to roast meat is very convenient especially catering for a larger group of people.
Trial run
The initial plan was to roast chicken wings. Piglet and I purchased some chicken wings for a trial run the week before since I have not roasted wings for a few years. It was for our weekday dinner meal plus I wanted to know the roasting time so that it will go smoothly on the dinner party day itself. One less thing to worry on that day…
I froze the wings, defreeze it the night before then marinated half with soy & garlic and kept it in the fridge overnight. As for the 2 pieces, I defreezed it the following day, added some baking powder, all purpose flour and salt to bake.
It took me 35 mins with 200C oven setting.
Taste test
The marinated wings tasted better and had a better look. Piglet suggested to add sugar to the wings so we decided to marinate some keto friendly wings separately.

The floured wings was meant to be mixed with a sweet gochujang sauce. It’s meant to be a healthy spin off of korean fried chicken. The issue is that the wings need to be dry before adding flour. I would need to use a lot of utensils e.g. big mixing bowl, pot and make the sauce itself on the dinner party day.
I decided on the marinated chicken. Less work, more consistent, not too many variables to affect the texture, consistent flavour, keto friendly portion can be separated and less utensils used. It might not be that authentic but never mind.
Buying Chicken
We went to the supermarket chicken section. The chicken wing tray was empty.
I flapped my arms like a chicken and asked the staff, “Ada ini (Any wings)?”
“Tak ada (Don’t have)” *Horrified*
Yikes! Piglet suggested to roast drumstick. In Malaysia, drumstick a popular part of the chicken… It is also same price per weight compared to chicken wings. I thought about it. It is actually less work roasting chicken because it can fill up one oven tray.

Have not roasted drumstick before but let’s give it a go.
Marinating drumstick
This time I marinated it before freezing. It turned out quite flavourful. Soaked in marinate liquid before it freeze and after thawing.
I poured it out of the plastic bag, pulled out some remaining feathers. Marinate liquid consisted of blended sugar, sesame oil, light soy, salt and garlic. I mixed it into the chicken and poured it into the same plastic bag. And I left it to freeze.
Baking Drumstick

I separated the non sugar ones (keto friendly) with aluminium foil.
Baked it for 50 mins 200C. Piglet tried the first one and it was cooked…
Blessing in disguise
I suppose it was a blessing that the wings were not available. It was easier to manage, less rubbish and space used… Will do drumstick next time for parties.
