Simple steamed egg dish with rice was one of the dishes I cooked often after a long shift. This time around, piglet had requested one with century egg and salted egg.

Century Egg

Century egg is a preserved egg and a chinese delicacy. I have only tasted it for the first time recently as the colour and looks of the egg scared me as a child. It smells of ammonia, taste pretty neutral and has a springy texture.

Ingredients: Salted egg, century egg, chicken egg, water

Method

1. Chop up century egg into pieces

2. Divide salted egg yolk and salted egg white
3. Chop salted egg yolk into pieces

4. Arrange century egg and salted egg yolk on a bowl
5. Add chicken egg and water (egg mixture to water ratio 1:1) to salted egg white and mix it

6. Sieve it and pour it into the bowl

7. Cover the bowl with cling film and steam it for 7-10 minutes
