The first time I cooked this for Piglet, he could not tell what this dish was. And was really surprised that it was potato as it was not too starchy and crunchy.

Most shredded potato dish I have come across is slightly sour and spicy or sweet and sour. I prefer mine to be plainer: slight fragrance of sze chuan peppercorn and salt.


Stir Fried Shredded Potato Recipe


Ingredients

700g Potato

1 tsp sichuan peppercorn

4 dried chili pepper

3 tbs cooking oil

salt to taste

Method

  1. Cut potato into matchstick. Soak it for 10 minutes and drain.

2. Fry dried chili pepper and sichuan peppercorn in cooking oil

3. Stir in shredded potato and fry for 5-8 minutes. Add salt to taste.
