I’ve been really curious on the taste of walnut milk and would prefer to taste one without additives. I was also looking for an alternative for a keto friendly milk when I bake.
So let’s try. Most recipes call for a ratio of walnut: water 1:2. Will do a diluted version first. It’s 1:4.
Ingredients
Half cup Walnut
2 cup Water to blend
(1 cup Water to Soak Walnut + 2 cup Water to Rinse Walnut)
Method

1.Soak walnuts the night before. I use drinking water and soak it in the fridge. The weather is humid and warm here. Even the walnuts were stored in the fridge in the baking shop.

2. The following day, rinse the walnut.
3. Blend water and walnut.


4. Use a cheese cloth to strain it


Taste
It taste quite neutral and nutty. I like it …
But soy bean milk is more affordable for my own consumption. Besides, I really like the typical soy bean milk ‘beany’ taste. It’s flavour a grew up with.
1kg soy bean cost RM3.80 (500g:RM1.90 makes 4L of soy bean milk)
1kg walnut cost RM40 (65g:RM2.60 makes 500ml of walnut milk)
1kg almond cost RM36.50
Maybe I can try almond next….
Keto friendly
I used a few nutritional label calculator- some were trial version, some free

I prefer the middle one but it is a trial version and mainly for food entrepreneurs. The other two are free online health websites.
Anyway I don’t really use it. Just want to find out how keto friendly is the milk I made.
