Piglet and I threw a bibimbap party a few weeks ago. However we wanted it to suit everyone’s dietary restriction. It is self serve and cater to those who are plant based, vegetarian, keto, fruitarians, sweet toothers and carnivores. So we added extras to go with bibimbap.
Bibimbap Bar

Bibimbap bar consisted of
- Rice
- Cauliflower ‘rice’
- Spinach
- Onions
- Carrots
- Soy Bean Sprouts
- Lettuce
- Mushroom
- Tofu
- Minced beef
- Sesame seed
- Spring onion
- Sesame oil
- Gochujang
- soy sauce
I put some sesame seed, spring onion and soy sauce in the serving area as I didn’t add too much in the separate vegetable itself. I did not want it too strong tasting for those not used to korean food. I tried reducing the salt too as some might take it separately as a banchan (side dish) instead of a rice mix.
I also gave them an option to fry their own egg but no one took that offer. The beef was keto friendly as I did not add in pear in the marinate but used a tablespoon of lakanto and more onions.
Kimchi

We need to have Kimchis too! I made the kimchis 4 days before the dinner party.
- Baechu Kimchi (Napa Cabbage Kimchi)
- Kkakdugi (Diced Radish Kimchi)
- Nabak Kimchi (Water Kimchi)
- Radish Salad (Musangchae) Non spicy version
I chose to do 2 spicy (1 radish, 1 napa cabbage) and 2 non spicy (1 radish, 1 napa cabbage). In fact I reduced the salt, fish sauce, chilli, garlic and onions but increased the glutinous rice paste for the spicy one this time round. It was a good combination considering that the fermentation at room temperature took only 1 day and then it went into the fridge.
More Protein

More protein for the carnivores:
- Roast Chicken Drumstick
- Bossam (Pork Wrap)
- Eomuk Bokkeum (Stir Fried Fish Cake)
- Gyeran Mari (Egg Roll)
The egg roll was really out of shape (nearly oval) and had pockets of ‘holes’ because I was multitasking. I was handling the oven and 3 hobs (fish cake, bibimbap vege, roasted tofu and bossam) all at the same time. Some egg layers were overcooked and some undercooked but nevermind…
Other banchan

Other banchan consisted of
- Kongjang (Braised soy bean)
- Gamja Jorim (Braised potato)
- Myulchi Bokkeum (Stir Fried Dried Anchovies)
Dessert

Cakes: Banana Cake, Carrot Walnut Cake, Brownies, Keto Brownies
I had reduced lakanto for the keto brownies again: from 85g to 67g. It taste really bitter to me but just nice for the keto guy.

Fruits: Banana, Watermelon, Pineapple, Promegranate, Papaya, Dragon Fruit
Guest brought mango and apples.
Leftovers
Ended up having leftovers for my meals the next few days…
2 meals of bibimbap and 2 meals of kimchi, other banchan, drumstick & eggs. Love korean food. Simple and predictable taste. Don’t mind having it every meal…
