I have been baking keto brownies for the past few months and made some adjustments here and there e.g. adding baking powder, almond flour, hazelnut flour, full piece of almond and walnut, walnut bits…
I have done 2 rounds of sweetener reduction and now its down to 65g from the usual 80g. I love milk chocolate and couldn’t figure out how someone would like non sweet bitter brownies until I tasted 99% cocoa dark chocolate bar that is keto friendly.
This time around, I was wondering whether I could substitute almond flour with coconut flour. Using coconut flour is about 5X cheaper than almond flour considering that quantity of coconut flour to almond is 1:3 since coconut flour is absorbent and almond flour is 2.5X the price of coconut flour.
It worked! I couldn’t taste the coconut flavour and the texture was finer. I could even add in walnut bits to it for a crunch.
Keto Dark Chocolate Brownies (Coconut Flour)
Adapted from keto brownies
Ingredients
130g Butter
60g Lakanto
3 eggs
23g coconut flour
75g cocoa powder
60g Walnut bits
Method

1.Melt butter, Lakanto, cocoa powder using a water bath method. Set aside to cool for about 15 minutes.
2. Preheat oven. Oven setting: 160 °C, fan.
3. Add eggs one by one and whisk.
4. Stir in coconut flour and pour in walnut bits.
5. Pour batter into an 8 inch lined baking tin
6. Bake for 16 minutes or until cooked.
