I used to have ‘cheat days’ for breakfast when pack of 4 muffins were on offer for 1 pound when I was in glasgow. It was something different compared to my usual berry yogurt breakfast.

I was trying to find a chocolate chip muffin recipe as I wanted to use some of my cooking chocolate.

And I came across this recipe from Sally’s baking addiction I had all the ingredients except yogurt/ sour cream so that was omitted. I also omitted cinnamon, nutmeg powder and did not sprinkle granulated sugar. And reduced the sugar to 180g, used 1/2 tsp of vanilla powder instead of vanilla extract and used chocolate bits instead of chocolate chip.

The method is pretty straightforward. Mix dry and wet ingredient respectively and then combine it.


Muffin top

Sally had advised to fill the batter up to the brim for that typical ‘muffin top’

I used cupcake liners as it is more convenient. It gave me 7 muffins.

I baked it for 210C for 5 mins then 170C 22 mins.
