I’m not a fan of oats and can tolerate it in a granola or muesli form. Sometimes I mill it into oat flour to bake e.g. oat crumble.
A week ago, someone tried this recipe and recommended it. I have yet to make my own granola as it uses oil and sugar syrup as a binder and this uses the starter as a binder instead. I also added some honey to sweeten it. Another option is to add raisins or eat it with sweet fruits.
It is not as crunchy this time around so I might make a stiffer starter or roast it longer/ with a higher temperature.
Sourdough Granola Recipe

Ingredients
50g Sourdough discard
40g Flour
30g + 30g Honey
40g Water
90g Rolled Oats
45g Mixed Seed
45g Mixed Nuts

1.Feed sourdough discard with flour, water and 30g honey.
2. After 1 hour, preheat oven to 120C and mix all ingredients.

3. Spread it on a baking tray.

4. Bake for about 50 mins or until slightly brown and crunchy.


I cut up some fruits: mango, guava, orange, banana and topped it with granola and chia seeds.
