I invited my friends over to my place after my kitchen reno. ‘Let’s do tea!’
Actually Piglet and I are down with a bad throat and I was trying to find a bit of a balance when it came to selecting the menu.
Food requirements:
- Tasty enough for my friends
- Does not taste like glass to our throat (leftovers)
- Healthier- reduced sugar/ sugar free
A few days before that, we bought a lot of avocados and Piglet suggested avocado toast. Unfortunately it was not ripe enough so I had to find alternatives.
Mini Tea Gathering Menu
- Brownie
- Butter Cake
- Bubur Cha Cha
- Fried Beehoon
I cooked the fried beehoon an hour before they arrived and baked/ cooked the brownie, butter cake, bubur cha cha the day before.
Sugar- free Bubur Cha Cha
First time making it in Jan. Recipe here.
I used dried stevia leaves. Soaking the stevia leaves in hot water then sieving the leaves out removes the known aftertaste. I then add it ‘to taste’.
Cooking bubur cha cha a day before consumption?
Most people are a bit wary on doing that as coconut milk spoils easily. I have tried it and it is fine if I cook it, leave it for 2 hours (to room temperature) and then chill it. It can keep for about 3 days in the fridge.

I stored the sweet potato and taro separately to prevent it breaking apart if left in the coconut milk liquid to cool. The purple sweet potato natural colouring might seep into it.

I used a packaged coconut milk this time around. Will need to add more coconut milk next time. Prefer thicker ones.
Cocoa Brownies
I reduced the amount of sugar and used brown sugar instead of white sugar.

The cocoa brownies actually taste like dark chocolate brownies. And the texture is so different. Hmm… Is white sugar sweeter than brown sugar? Might go back to using white sugar next time.

Butter Cake
Butter cake was quite dry. Maybe it was overbaked.
I put 3/4 of the butter cake in the freezer.

Fried Beehoon
Need some carby real food for my late lunch + tea. Fried some ‘economy’ basic fried beehoon consisting of vege, egg and beehoon.

Had quite a bit left behind and had it for my lunches the next few days.
